El púding de Nadal o Christmas pudding és el postre estrella del sopar de Nadal a Gran Bretanya. Un complex pa de pessic elaborat bàsicament de molla i fruita seca. La recepta és transmesa de generació en generació a les famílies britàniques. La seva tradició indica que s’ha de preparar durant el mes de novembre coincidint amb el començament de l’Advent (Stir-up Sunday), encara que es consumeixi el 25 de desembre.

Una dada curiosa és que, durant la seva preparació, també es poden afegir monedes embolicades amb paper d’alumini, que prediran la bona fortuna del comensal que se l’hagi trobada.

Alguna vegada has provat el Christmas pudding? És un concepte diferent del que aquí entenem per púding, però una proposta interessant per aquest nadal. A continuació et descrivim els seus ingredients i la seva  preparació en anglès, segons la BBC Good Food perquè a més de cuinar posis en pràctica les teves habilitats culinàries en anglès.

Ingredients / Ingredients:

  • 350g sultanas – sultanes
  • 350g raisins or currants – panses o groselles
  • 150g dried figs, chopped – figues seques picades
  • 125g candied peel – closca confitada
  • 100g dried apricots – albercocs secs
  • 75g dark glacé cherries, halved – cireres fosques glacejades
  • 150ml brandy – conyac
  • 100g ginger in syrup, chopped –  de gingebre picat en almívar
  • Plus 2 tbsp of the syrup – 2 cullerades de xarop
  • 2 apples or quinces, grated – pomes o codony ratllat
  • 2 oranges, juice and zest – taronges, suc i ratlladura
  • 6 eggs, beaten – 6 ous batuts
  • 250g shredded suet – sèu triturat
  • 350g soft muscovado sugar – sucre morè de canya suau
  • 250g fresh breadcrumbs – pa ratllat fresc
  • 175g self-raising flour – farina natural
  • 1 tsp mixed spice – 1culleradeta d’espècies mixtes
  • 2 old sixpences or coins (optional) – 2 monedes (opcional)

Method / Preparació

  • For this recipe you will need two 1.5 litre plastic pudding basins with lids.
  • Soak the sultanas, raisins, currants, figs, peel, apricots and cherries in the brandy overnight, giving it a good stir every now and then.
  • The following day, in a large bowl mix the ginger, syrup, apples or quinces, orange juice and zest with the eggs, suet, sugar, crumbs and flour.
  • Stir in the soaked fruit and spice.
  • Grease the two pudding basins and divide the mix between them. Add coins now if you’re using them.
  • Cut two circles of greaseproof paper to cover the top of the pudding and fold a pleat down the centre to allow pudding to expand.
  • Put lids on the basins and steam puddings for 3½ hours.
  • Let puddings cool before removing greaseproof paper and covering tightly with cling film and lid. The puddings can now be stored in a cool, dry place until Christmas.
  • To reheat, steam pudding for a further 3½ hours, turn out and flame with brandy.
